I’m not very techy when it comes to this stuff but have a basic understanding but I was looking at getting a 210XST but was wondering if the cab would be able to handle the power of the head. I’m currently using a peavy cab with a 1000w rating on the speaker which was replaced with a PA speaker. You guys got any thoughts on this?

Ampeg pf500 with Eden 210XST 500w 8 ohm

The PF-500 will put out 300 watts at 8 ohms. Your speaker cab is likely an 8 ohm cabinet. The 210 XST can handle 500 watts RMS (RMS basically means continuous power handling). You will be fine. Keep your ears open for signs of distress if you crank up the bass frequencies too high.
