I lived in Belgium for 2 years and a big seller there is "Filet Americain" - Raw ground beef (Funny thing that 99% of Americans wouldn't touch it!)
If the beef is handled properly - Raw is where it's at (Just like Sushi)

Being raised in Milwaukee, cannibal sandwiches are a traditional favorite. Find the very best ground top sirloin you can (Karl's Meat Market in Menomonee Falls is a great source), butter up some nice dark rye, salt and pepper to taste and top with sharp onion slivers or slices. That makes a meal fit for a king. None of that mamby-pamby tar-tar with egg or Woshtershire needed.
