Actually at this point in the USA - it usually comes from wild game, not pork.

If it's good meat, I hate to see it ruined by overcooking. Make mine medium rare, please!

About 90% of the red meat we eat in my house is Venison I shoot.

I do enjoy Venison. My cousins in Indiana go deer hunting all the time and bring home some tasty vittles!

Regular restaurant or Safeway steak ... Medium Rare for me.

Good quality meat from a good butcher (Anyone tried American Kobe? Angus / Wagyu cross ... mmmm) Rare or Blue.

Carpaccio is good if done right but I've had some really bad renditions at times.

Never tried American Kobe, but have Angus fairly often. Wagyu be expensive! Which makes sense why they produce the cross.

Belted Galloway is nice beef too, heard that there are a fair few heards of those dotted about the US these days!
