What are some of the must have staple songs to know for a a gigging bassist playing in a rock cover band?

I would suggest to do a search for classic rock here -- there's been quite a number of threads.
Now to answer your question, I think that depends on where you are. I would recommend checking out the regularly working bands and see what they play.

Mustang Sally yeah there I said it want to make something of it! lol Mr.Dos list is good a lot of must plays on there I would add Free Bird you can hate it to death but they the paying customers always ask to hear it. And The Beatle, Eagles and Stones are a must

Wow - I guess there's still some musical differences between the UK and the US. There's at least half of those songs on MrDos's list that I've never even heard of, and I've been playing in cover bands over here for years. I'll have to check them out.

And...Brown Eyed Girl is that Rock? an oft requested and covered song no doubt.... but easy listening at best, certainly not Rock?

My son's high school jazz band did a performance at a school fundraiser a few nights ago and one of the parents, who you'd think should know better, actually yelled "FREEBIRD!" while the jazz band director was introducing a song.

Yeah, there's one in every crowd.
