I've read (I think in that Life book) that Keith often uses a weird open tuning with the low e string removed, so that meme may possibly be accurate.
It's just an open G tuning. He removes the E so as to avoid the low D that is part of open G....... when you've got a bass player you don't need that note anyway.
It's why so many guitarists can't get many of the Stones songs right if they don't do the open G thing.

You could even get 5 string sets at one time.

It's not weird - it's an open G tuning:

G D G B D. WITH six strings, the fifth would be on top. Try it. It will take about 30 seconds to learn how he played Start Me Up, Brown Sugar, etc. You'll never want to play them in standard tuning again.

I often joke that I play a boat oar. I tell people I bought my bass on sale half off that is why it is so small. (although it sure was not cheap when I bought it in 1984 for $1,435)
