Modify app so it pushes data to a Kinesis stream.
Make entire audience download app, masking it as a giveaway contest like free beer for a year.
Tell bar you are giving them a direct portal to customers and send read replica of data to bar manager.
Log your set, analyze in real time to a TV you can watch.

Why not get a decibel meter and put it to a scientific test? It may not tell you "why", but it can put the possibility of "subjective perceptions" to rest. 
So if I run a space heater blowing into the back of a tube amp, will that make it produce even still more volume?

You are probably experiencing ear fatigue. Your band is playing at a loud volume and during the night, you will progressively hear less of the high frequencies making the lows sound louder. The fist time I experienced this was at a concert over 30 years go. On the way home, I turned the radio on and noticed that I was having trouble hearing guitar parts and all the songs sounded muddy.
Does the number of mobile sound baffles diminish at the venue as the evening progresses? An empty room sounds louder than one filled with sound baffles (people).

I always put more energy into playing as a show goes on, as nerves are replaced by excitement.
Certainly something changed. Maybe not volume of other instruments, but EQ. I.e. if guitarist cuts his lows, your bass guitar seems louder.

Oodles more. Esoecially when the components start breaking down from the extra heat. That godawful electronic screech!…and the subsequent fireworks are a sight to behold.

Haven't been able to buy amplified heat since Pressed Rat and Warthog closed down their shop.
