Let's see, the front of a Peavey B-Quad 5-string has 5 knobs, for controlling volume and tone networks for the 2 magnetic and 1 piezo pickups, plus a switch for stereo-mono mode. On the back, it has 2 sets of paired pots for each string, one set of pots to control level and stereo pan for the magnetic pickups, and another set to control level and pan for the piezo pickup.


Total: 26 switches, knobs and pots
 
I'd post a pic of my Wishbass but it would lose as the only control is the volume knob which loosely regulates the amount of static it puts out.

I am surprised nobody has mentioned the Bongo, there's a lot of weird things you do with their knob within a knob, surrounded by a knob and wrapped by 7 knobs thing.
 
I'll throw the Dingwall Z3 in the ring. It "only" has 5 knobs and three switches, but hidden within the knobs are a ton of tonal features.

You need to look up the Z-3 that Sheldon built for FRB. It's got a much more complex switching system. He wanted ALL of the possible combinations of pickups and all choices of parallel/series between them, along with all of the internal choices too.

Sheldon only did it once then swore it off for good.
