It probably wouldn't as long as you used a full water pan. But for the smoker treatment on delicate fish, I would use a plank. Have you tried it?

Never used a plank in the smoker. Have on the grill and its worked out great. If using a plank in the smoker, should I reduce the amount of wood chips?

Smoked a brisket for dinner tonight. Marinaded it for two days in a homemade bourbon sauce before putting it in. Used less water than normal too. Oh man was it good. I can still smell it on me. May not have to wash these clothes for a while.

I love that this thread has reached 5 pages without the OP posting again. And that isn't just in the thread. OP has not made another post anywhere on the forum since starting this.
Mabye it was a guitar player pretending to be a bassist to show how easily we bassists are distracted from,....wait....what was going on again?
 
Watermelon body with a pineapple top, orange capacitors, croissant bridge (chocolate filled for rounder more sustained tone), spaghetti squash strings with a raspberry core, pretzel neck with a rhubarb board. Vanilla frets. And THAT is the best bass for metal.
 
Staying on topic, why is the plural of bass (guitar) basses, yet the plural of bass (fish), is Bass? As in; "Hey, there's a school of basses over there in that pond."
