Before my first build: Hardware

I'm going to build a 7-string tuned F# B E A D G C, main thread here.

I think I'll go with Hipshot Ultralites. I'm thinking of a 4+3 tuner configuration. It is frequently stated that they can easily be converted between left and right side, but I cant find anything on exactly how that is done. I would just like to know as much as possible before I buy anything.

I'm also going with individual bridges, as it's a fanned fret. What bridges would you suggest?
 
My hipshot ultralites have an itty bitty very tiny hex-head screw on the end of the knob shaft.

My assumption is if I unscrew it, I could put the shaft in the other way, so it'd be "righty-tighty lefty-loosey" on the left-handed side of the headstock (by which I mean the right hand side as you face the bass).

I'm not sure if I have a small enough Allen wrench to fit it.

tbh, in my way of thinking, having lefty-tighty on the 5th string is not a bad thing.
