Black coffee appreciation

If a spoon won't stand up in my espresso then it ain't espresso. And made in one of these...

I use a particular medium dark roast in mine, prefer it over Italian espresso roasts in these machines.

I also only fill the basket up to a bit over ¾ full, makes a real balanced flavorful pot of coffee, strong and closer to a proper espresso in flavour than actually using espresso beans, which come out more bitter in this type of machine.

I fill the basket and compress it well. I fill the bottom with near-boiling water (use a glove) then use a gentle hot-plate to ease the water through slowly rather than a boiling torrent. No bitterness for me, but I know what you mean...
 
I don't typically drink "dessert coffee", as I call it. Filled with moron carbs, a deadly amount of sugar and you don't even get a satisfactory wake up from it.

I didn't really drink black coffee until last year. I was preparing to meet my then-girlfriend's uncle for coffee and he was buying. He's an exemplary, but gruff dude. Nice fella, though I didn't want to order a "girly" PSL or anything. So he orders a 12 oz Americano. I order the same, but in a 16 oz. No sugar, no room for cream.

We talk and eventually I bring up marriage. I cut to the chase and asked him if I could marry his niece, to which he said yes. Pretty sure the black coffee did the trick. ;)

I only drink black coffee since then.
