Great little compression pedal, but I always find myself turning the attack and sustain almost all the way off. anyone else do the same?

Yeah, but IMO the "sweet spot" for the sustain knob on the CS-3 is around 9:00 to 10:00, so maybe that's what he means by "almost all the way off".
The attack knob doesn't have an "off" or "low" setting, it controls the speed of the compressor's attack. So if you like it with the knob turned mostly to the left, then that is the speed you like--nothing to do with "almost off".
