I think if I were buying new I'd definitely opt for the nitro finish as that seems like one common variable that has been present in the LG's that I've really liked. I'm basing this of course on a really small sample size as I've played a couple of LG's finished in poly. They were all great but for whatever reason I seem to dig the nitro ones slightly more.
As for the DN board, if you have money to burn, definitely go for it. I'm not sure I'd order it on a new bass. Not because it's not worth it but because I'm kind of a cheapskate... I got mine used so it was a bit of a moot point.
I'm glad I have it on two of mine because I believe it probably does contribute something tonally along the way. It's also quite beautiful -- and, if nothing else, it does add some cool cache to these basses.
