Mmmmm tasty. Don't know about using it as a finish though.
I know many recommend lemon oil. I wonder if coconut oil is too heavy. I could always use Dr. Duck’s Axwax.

What kind of board are we talking about? I wouldn't put anything on most fretless boards.
The board on a Classic Vibe Fretless. I usually put stuff on my unfinished boards.

Fodera is right. Lemon oil is just mineral oil with ester scent added. Food grade mineral oil can be had at Walmart for about 2 bucks a pint and has no drying additives such as mineral spirits.
Fret Doctor is good stuff, Dr. Cheese... never done me wrong... fretted or fretless.
I really like fret doctor. I wouldn’t get coconut oil anywhere near a fingerboard. It is solid at room temp and won’t soak in right. Then it will go rancid
The only thing I put on my fretless board were a few coats of Poly. Love me some Mwaaa.
Wood doesn't need to be oiled unless you want it to shine. In any case, never put food oils, they go rancid and end up moldy. I guess you don't want that on your fingerboard. 
I've been using Butcher Block Oil. Food grade. Humidity, or lack thereof is a problem, in Wyoming. I usually use a drop and some 0000 steel wool to clean the finger gunk, when I change my springs. Keeps everything sounding nice and warm.

I bought a bottle of Belmonte bore oil for my unfinished fretboards. I rarely use it.
I put a coat of mineral oil on the ebony fret board to my stingray. Man i know how important a proper setup is but just doing that added a smoothness to that instrument i haven't felt since i originally bought it.
Unfinished woods, especially ebony, should be regularly oiled.

I would think coconut would go pretty rancid eventually and get pretty rotten on there.
