Cover is as good as/better than Original

Burning of the Midnight Lamp is a Hendrix original.

On her all-cover CD "Cover Girl", Shawn Colvin has a few tracks that might qualify here. One in particular is "If These Walls Could Speak", which was written and originally recorded by Jimmy Webb and covered pretty broadly in country circles.
I had never heard the song before the Shawn Colvin version, and I liked it so much I tracked down and acquired number of other versions, including Webb's. None is as good as Colvin's, IMO.
Other standouts on that CD are "Satin Sheets" (originally by Willis Alan Ramsey) and "This Must Be The Place" (by Talking Heads).
I do not, however, care for her version of "Every Little Thing She Does Is Magic" by the Police; it loses the bouncy vibe that makes the original work, in my view.

-.5 I totally dig Killswitch's Holy Diver. Personally, I think it blows Dio's out of the water and then eats it... but i haven't heard the other one.
"Burning of the Midnight Lamp" is a very early Hendrix song, maybe the first he used the wah-wah on. Dylan had nothing to do with it (other than his influence on Jimi).
I know of three Dylan songs recorded by Hendrix:
1) "Like a Rolling Stone"
2) "All Along the Watchtower"
3) "Drifter's Escape"

Easy Like Sunday Morning - The Commodores/Faith No More. I can't agree about the War Pigs thing though. Sabbath's, IMO, is better.

cradle of filths hallowed be thy name is ALOT worse than killswitch's holy diver IMO. actually i have to admit, i haven't given the killswitch cover much of a chance, but first impressions weren't great.
