i cant believe i am actually going to say this first part and i hope that this counts as a "cover"

jxl-his remix of elvis presley's "a little less conversation" and paul oakenfold's remix of "rubberneckin" are better than elvis' originals.

the georgia satellites remake of the beatles "dont pass me by" tops my list of favorite covers. their version of joe south's "games people" play is pretty damn stellar too.

i wont say this version is better but it completely redefined the song for me, johnny cash doing bruce springsteen's " further on up the road" on AMERICA V makes me wanna cry.

I've heard two versions of War Pigs that were better than the Sabbath original:
Faith No More's version was awesome, then when I saw Zakk Wylde's band Pride & Glory (before black label society) he did war pigs way better than any version I've ever heard (Zakk sang it). Although I don't think that he ever recorded it, so I dunno if that counts...
