Anything by Postmodern Jukebox, Mothers of Modern Science and Walk off the Earth. I discovered these bands while playing in a top 40 band (loved the gigs, hated the music). I started seeking out covers to learn the songs as I could not stand the originals (e.g. Blurred Lines, need I say more?).

The 23 minute live version of Get Ready is awesome. I sometimes listen to it in the car on the way to the gym and it psyche’s me right up.

When I heard Disturbed covering S&G, I was apprehensive -- and by the chorus, I had walked across the room to change the radio station.

How about Jeff Buckley's version of "Hallelujah" by Leonard Cohen, and the Cowboy Junkies' version of "Sweet Jane" by The Velvet Underground?
