My all time favourites are Rush's covers of Summertime Blues and Crossroads. Heart's cover of Stairway to Heaven is also amazing. I know there are more but they aren't coming to mind at this second.

I've got a few.
First Brie Larson's cover of "Black Sheep" (The Metrics) from Scott Pilgrim (I'm a fan of that movie). Also am I the only one who thinks Brie/Envy Adams (her character in Scott Pilgrim) looks just like Misa Amane (Death Note) in real life (more so than the live action version of Misa).
Second, Nirvana performing "The Man Who Sold the World" (David Bowie). Kinda obvious.
Almost anything covered by Pellek but especially the theme from MGS3 (also a big Metal Gear fan), "Snake Eater". He's an excellent power metal tenor.
Of course "Hurt" (Nine Inch Nails) by Johnny Cash.
That's enough for now.
Granted, this is what they do, but I LOVE this version
Hayseed Dixie ~ Cold Gin
Some may consider this sacrilege--but I like this version better than the original--but I still like the original as well.
Testament > Aerosmith's Nobody's Fault.
Cake - I will Survive
Not my favorite band, but I really dig dude's basslines. This is a fun rendition of the classic song.
