Covers that are pretty awesome.

Seventeen pages in, I suppose some of these have been mentioned, but they're ones I like.
Social Distortion- Backstreet Girl, cover of a Stones song
Gram Parsons & Emmylou Harris- Love Hurts
Flying Burrito Brothers - Dark End Of The Street
David Bowie - I Wish You Would
The Band - Don't Do It
Lyle Lovett - Friend Of The Devil

Honorable (dishonorable?) mention - GG Allin - Carmelita

I could blather on, but I won't.
 
Now that I think on it:
Led Zep made the songs their own when they covered old blues tunes.
Of course, any Jimi Hendrix cover, but especially the Dylan songs, and the National Anthem (kids, look it up!)
When B.B. King covered Leon Russell's "Hummingbird," he kept pretty true to the original, but made it memorable by bumping the soul up just a bit.
But the penultimate cover of all time has to be Bill Monroe's cover of Elvis' cover of Bill Monroe's "Blue Moon of Kentucky!"

I personally think Disturbed's cover of "Land of Confusion" (Genesis/Phil Collins) and "Sound of Silence" (Simon and Garfunkle) are really good. The former rocks and adds to the message of the original. The latter showcases powerful vocals (although I'm surprised by how low-key/non metal it is) and could put a tear to one's eyes. Also remixing is its own art and can really add to a song at times.

I love the Dave Matthews Band live cover of Long Black Veil from Listener Supported. The original by The Band is great, too. Jeff Becks instrumental cover of A Day in the Life is great, too, imo.
 
It's already been mentioned multiple times, but I'd feel like I was leaving something out if I didn't mention Johnny Cash's cover of Hurt... Calling it a cover seems to undervalue it, Cash so totally owns the song that it's now his and Trent Reznor should now be claiming he's covering Johnny Cash's song.

Steve Earle covering Tom Waits' Way Down In The Hole, but I'll like just about anything Steve Earle puts his hand to


Anthrax covering Joe Jackson's Got The Time... Persistence of Time came out when I was just starting to play, so a thrash song with a bass solo was always going to work for me ;)


Ghost covering ABBA's I'm a Marionette
