If I have it my way, sunny side up. Pan/griddle heat a bit on the high side so the bottom is golden brown and the yolk is still beautiful and runny. Served with potatoes, some kind of pork, rye toast with jam and cretons, some beans, and tomato slices fried quickly and lightly with onions and garlic. Depending on the day, a bit of whiskey or espresso and orange juice as well.
 
It's good. The crab cake doesn't have to be amazing but the hollandaise has to be legit. Lots of places make a half ass version.

So I didn't end up making it at home. I met my lady friend at The Original Pancake House in Edina and was surprised that their version didn't replace the English Muffin with the crab cake; theirs replaces the Canadian Bacon/Ham with the crab cake. It was excellent; the eggs were perfectly prepared, and the hollandaise was definitely legit, but I missed the flavor/texture of the pig meat.

So if you've ever wondered who takes pictures of their food, my lady friend is one of them, and here is the photo:

Crab Benedict is at the top. She ordered the Pecan Pancakes, which I did try, and were excellent. OHP is a pretty good, but slightly expensive breakfast restaurant.

So it's eggs Benedict without ham but with a giant crab cake on the side? I wouldn't turn it down but the one I had had the crab cake on the bottom just a little bigger than an English muffin.

Not exactly. It's Eggs Benedict with the English Muffin, topped by the crab cake and then the eggs on top. That "giant crab cake" is actually the biggest side of hash browns I've ever been served!

But I really want to eat what you describe; in fact I'm going back to the story that I will make one myself!

Oooh. I thought that was just a huge crab cake. Yah you gotta try it so you can have egg goo and hollandaise soaking into the crab cake. Out of this world.

OK, so I've been searching for Crab Cake Benedict recipes, and they are all made exactly like what I had. English Muffin, Crab Cakes, topped with eggs and hollandaise. But when I make it, I'm putting Canadian Bacon in there too, and now the recipe is MINE. :)

And just to make sure I don't forget, those hash browns were perfect, and so was everything else at that breakfast.

I like them quite a few ways, but as my list of priorities gets larger with heavier items, I can waste time on TB more than I like to waste it on breakfast preparing or eating. Burritos is the way they've been done most days the past few years, sometimes done over-medium before being rolled into a shell with potaters obrien or leftover steak and mashed/baked tates.
 
Ever since I spent a summer canoeing across Canada, with seldom anything besides powdered (not an option, I noticed) available, I have always enjoyed seeing those yolks looking back at me. So, it's sunny-side up whenever possible! I will indulge in omelettes or other variations sometimes, though.
In the navy on a submarine we'd have fresh eggs to order for about 5 weeks. They stored em in the torpedo room bilge, because it was cool and no room in the fridge. Word would spread once they found a bad one throughout the sub. Then it was powered eggs the rest of patrol, which weren't bad just always scrambled. It was always nice to get back to the world and have some over easy eggs again though. Breakfast on the sub was by far my favorite meal, always a delicious spread.
 
I adore flan with a passion. Crème brûlée is yum too, but I like the jiggly texture of flan better, and it’s so much fun to say.

Sadly I’m off sweets for the foreseeable future as I’ve been trying out the keto diet lately (and it’s been working!). It fits well with my perennial poverty as I can rely on eggs as a staple- stretching out after work with a couple of nice runny over-easies is a deeply comforting experience.
