I have two pounds of ground and about three pounds of sausage breakfast style.

Add fat to the meat when you cook it. It's naturally very lean, and will dry out quickly. The sausage probably has fat added already.

All those elk moose deer varieties must be some crazy lean. I have had farmed venison which is quite lean but I don't think as lean as wild.

I saw the previous Alone series on TV. Dude winning lucked into a moose but he lost all the fat he had rendered off the less edible parts, to a theiving wolverine. The meat he saved couldn't hardly sustain him for lack of fat in it. Only the condition he maintained up until then got him the win. If he had kept his fat he would have been cruising to the end the winningest winner ever.
