Elk... How do you...

Eat it? I've got some elk meat.

No pics, no scary elk meat.

Chili is the default choice for ground elk, for sure. But burgers fried in a little virgin coconut oil work pretty danged well too. You might also want to look at recipes for bison, which is probably the nearest commercial fit to elk IME.

Sausage? Pretend it's bacon, and carry on as usual. Or sumthin'.:cool:

Hmm. Right now it's just wrapped in butcher paper. When I open it up to cook it, I'll take pics. Someone mentioned tacos. That might be really good. I'm just not a huge fan of chili. I dig it, but just don't go ape over it. Phalex mentioned lasagna, and that sounds promising. Last meat my neighbor gave me was wild boar and that was amazing in spaghetti. I'll probably make it on Saturday.

Same for me generally, but elk chili is the bomb. How about pho? Seems like elk would work great for that...
 
Use it however you would normally use ground beef or sausage. With Elk burger, my favorite is to just have burgers. I cook ‘em on the gas grill. I like mine with cheese – it’s a recipe I’ve been calling “elk cheese burgers” – with that breakfast sausage, I’d probably cook it up along with some eggs and some hash browns or pancakes.

I agree, elk pretty much can be used as beef. To me, venison requires more camouflage in dishes with spices or strong flavorings. Even with flavor variations based on deer and their food, it's different than elk.

Maybe. You cook a big 'ol pancake and then place your bacon, or sausage, or favorite breakfast meat product right on top of the pancake (because the pancake covers the whole plate), and you put your eggs right on top of the pancake too, then cover the whole mess with syrup and enjoy!

Now I'm hungry.

1. Form the ground meat into patties, the same as if you are making regular burgers... spice them the same
2. place some mild soft cheese in the centre of the patty, ensuring that it is completely covered with meat.
3. Wrap the entire patty in bacon, grill and serve on a bun.
4. shove it down yer throat!
5. burp up elk juices
6. drink a beer
7. repeat step 6 as many times as it takes
8. don't forget step 6

I use venison anywhere I would use beef.

Burgers, tacos, lasagna, whatever...

The bull elk is a very crafty animal for about fifty weeks of the year; his senses are so sharp that only an artful stalker can get within a thousand yards of him...but when the rut comes on, in the autumn, any geek with the sense to blow an elk-whistle can lure a bull elk right up to his car in ten minutes if he can drive within hearing range.


The dumb bastards lose all control of themselves when the rut comes on. Their eyes glaze over, their ears pack up with hot wax, and their loins get heavy with blood. Anything that sounds like a cow elk in heat will fuse the central nervous systems of every bull on the mountain.
