As far as original music for a soundtrack I would say "Thief" soundtrack by Tangerine Dream, and "Dead Man" by Neil Young.

Here, let me help push over the edge of Out Of Hand:
My favorite movie soundtrack is John Corigliano's "Three Hallucinations"...which is a concert reduction of his score to the movie Altered States.
Sixteen Candles, although you'll have to make your own OST compilation. The studio only released an EP with 5 songs.

All of Greg Stump's films (they're ski films, for those not familiar with Mr Stump's work). Incredibly original selection of songs from acts that often didn't get much exposure in North America.

Good call on Morricone. I have a bunch of his Leone soundtracks on CD. I'm also a big John Barry fan. Any number of his Bond soundtracks are classics but I have a real soft spot for "A View To A Kill".
I did an analysis of the soundtrack for "For Your Eyes Only" a few years ago and really got to appreciate what Bill Conti did with that.
Bottle Rocket, Rushmore, The Royal Tenenbaums, The Life Aquatic with Steve Zissou, Goodfellas, O Brother Where Art Thou, The Big Lebowski, 2001, A Clockwork Orange, Woodstock, and the greatest: The Last Waltz. The last two may be cheating, but they are movies and they did have amazing soundtracks.
