Other way around; you want the wattage on the cab to be higher than that of the combo (or head). On the cab, the wattage is what the cab can handle. On the combo or head, wattage is what the amp produces (max). You don't want 500 watts going into something that can only handle 100 watts.

Yes you can!
Just use a Rumble 115 cabinet. The Eminence 15" driver is the very same as in the Rumble 200 combo. Place the Rumble 200 on top of the Rumble 115 cabinet and make sure the voice coils are in perfect alignment, and the magic of cabinet coupling effect will be yours to enjoy. 
Move twice the air and gain twice the dispersion along with 50 more watts and 5 more dB SPL. Now 5 dB may not sound like a lot, but remember, 10 dB is twice as loud. ex: 110 dB is twice as loud as 100 dB.Now remember all that as there will be quiz.

I was being lazy, so when I got My guitar (SG) out I decided to play it through my New Rumble 200 v3 instead of getting out my Guitar amp and holy crap !! Shades of SRV!! The Tone coming out of that 15” was Heavenly. The Rumble series is a clear Winner for being one of “The” BEST amps FENDER HAS EVER PRODUCED!
Yep! It's got enough headroom that I usually use mine by itself( or my R40 for our smallest gigs). I only add the 112 extension in 2 of our regular venues. I'm more likely to be told to back off than "turn it up"Addendum:Our 60s/70s group plays small-ish places. One restaurant bar we have to fit the 4 of us,4 mics, 3 amps,drum set and Bose type Pa in about 6'x16'. The dance area is maybe 8'x8' and we're about 5' from the corner of the bar. I use the 40 on that one

Is the 12 one of the rumble 112 cabs ? I have one of those , been using it with the Rumble 500 head , i was talking to the store where I got the head , and considering exchanging it towards the Rumble 200 115 combo , keeping my 112 cab to put with it for bigger outdoor stuff , if the 115 combo would handle small to med , bar things by its self , I think I like that idea , but not sure if its the thing to do ?
If it were me, I would get a 15 Cab for your R500 head. Keep or exchange the 12 Cab.
I've only used the 2 together once since I got the R112. I put the R200C up on top where I could hear It better and made the sound fuller. I had the gain @ 12 ,Bass 12, lo mid 2, hi mid 2, treble 11, master 10. Filled the room(an American Legion hall). FWIW, I don't use the drive. I'm completely happy with the combination.
Adding another 112 cab to your rig would be another good option for the outdoor stuff.
Since you already have a Rumble 500 Head, a 15 cab (or a second one), would be my choice but, I would make sure I had a HFP, just for clarity...(per Stumbo).
The hard part is finding one. There Were a couple on AMS and Zzounds the other day. Dunno if they're still available.
Will cover any 100 person room with ease. For anything where PA support is needed just use a mic cable from the XLR out straight into the board. Piece of cake.
But, cbnutt said he already has an R500 head. If that's the case, would you still recommend the C200?
