Adam's Needle Yucca - Direct Gardening
It's a pretty hardy plant. They have tubers underground. My mom told me, about 50 years ago, that in some places in S. America they are grown for food. They don't flower every year.

We have yucca in our front garden. I used to walk among them 6000'-9000' up in the local mountains when i lived in L.A.
Nice! Are those in your yard?
We had a few of those at our house in Lacey. They'd bloom up to 7-8' tall some years.

I hope if they are in your yard you like them, because trying to get rid of them is no easy feat. One of my employees asked me to bring some of the tuber to her so she could prepare it for me. Her family uses it boiled and mashed along the lines of potatoes as a starch. I dug down about 3 feet or so and the tuber was still as thick as my forearm! I gave her some, thinking it was the end of the plant. Nope, now it has multiple heads and has expanded its footprint! 
Eat the flowers. Careful not to eat to much yucca tuber. It contains saponins. My wife went to a weekend archaeobotany seminar a couple months ago that included a lecture by Dr. Leslie Bush on native plant foods.

Good info! Yeah, I tried as a novelty, but not to incorporate it into my diet. I already eat enough things I enjoy more than yucca root that are bad for me.
OK, here's one for you botanists, and people that play botanists on TV - I ran across this guy recently and it has me utterly confused. It looks like two totally different species, but to the best of my ability to discern, this is a single plant, but with two distinct blossoms:
