Two words....reverse sear. A reverse seared fillet is the end all be all.
Let the steak sit out on the counter until it gets closer to room temp. Season it and then put it on a rack over a cookie sheet in an oven set to about 275 degree's for about 45-50 minutes (for med. rare). Take it out and let it sit for ten minutes or so. Then sear it off in a really hot pan with some olive oil about a minute and a half on each side. Take it out and eat it right away as it's already been rested. Nice sear on the outside and perfectly and exactly done the same way all the way through the steak. Beautiful.
