Indy bands with outrageous equipment

If you are playing venues that supply the PA then buying one is pointless. I have played gigs where the PA cost 6 figures and I used an Eden WT-260. The band members couldn't hear my rig but they could hear them through the monitors. For bands that supply there own PA they would be better off with small and cheaper backline and a better PA IMO. Instead they spend big money on their personal rigs and then buy a cheap PA.
Most of the Small gigs we play, have monitors, that are either only for vocals, or stage ornaments collecting dust, (if they ever have them at all). Big amps let you here yourself over the drums, especially when playing on a raised hollow stage. (the drums flood the stage with sound)
Furthermore, in order to hear your self over the Guitards who like to play at 11, the bass needs double the power set to 12
But, I would say ultimately people who own big rigs and nice gear do so because they enjoy their craft and want to use it.
It's like bagging on someone for buying a sports car, who lives in a big city...Just because he can't floor it all the time, doesn't mean he doesn't enjoy it just the same. Last time I checked I live in America, we enjoy nice things here

On the subject of a good PA, +1. Backline gear is all fine and good, but usually won't help the crowd as much as a well-designed PA layout. The whole idea is to have THEM hear you well, not just you hearing you well.
A coffee house gig soloist can probably get away with a single amp, or a very simple PA, like the Fishman SA220.
But, sometimes, need has very little to do with the reality known as WANT. Let the indie band have their big stack. More power to them if they have the backs to lug that stuff around.
