Is it okay to unplug 1 Ampeg 810e Speaker?

I was also going to suggest plugging into the top 410 of the second cab. See if that helps.
Not familiar with a series/parallel box.

FWIW, the new MESA WD800 and D800/+ are good for 2 ohms. I'd think they are more stable than the Darkglass.

mesa makes individual parallel or series box. OP could use this Series Box

You said you got your second M900 head. Am I reading that as you have 2, or you had one, got rid of it, and now have another?

If you have 2, why not slave the second off the first, and use each to power 1 810? Each amp would see only a 4 ohm load, you'd have all 16 speakers running.

8-10’s at 4 ohms and there’s a problem?

Even a little 400 rb sounds amazing and pushes plenty of air through an 810. Goes for hours on end.

If this is a 2 - 810 rig, I have to ask why? Big stage? 1-810 is enough for both sound coverage and stage presence.

If you have to run 2 refrigerators it would probably be best to invest in a pair of 8 ohm cabs.

why buy cabs when a $40 (less if you make it yourself) series box solves it?

Interesting one would purchase a product that has a known defect by most owners, yet the manufacturer still produces said product with said defect, and people keep buying them.

I've owned a few amps that claimed they could handle 2 ohms but really couldn't. One was an SWR that would create these weird "Crack" sounds in the piezo tweeters when run at 2 ohms but never made that sound running at 4 ohms. Just weird. The only amps I've ever trusted at 2 ohms were Peaveys (like the mkIV mentioned above) and tube amps with 2 ohm taps on the transfomer like an SVT.
 
In this day and age, there is absolutely no reason to use 2 ‘fridges. (Yes, I do know that’s how they were initially designed and marketed)

IMHO, there is a meaningful distinction between need and want that should not be ignored. Few people need to use two fridges, but apparently quite a few want to use 2 fridges. In this case, I believe one is for the bass player, and one is for the guitar player. Running half a fridge for the guitar player will probably improve the situation a bit over running both fridges.

Fridges have ridiculously weird dispersion characteristics. If that’s the goal, there are many cab configurations with better dispersion characteristics that would not involve having to deal with 2 ohms or trying to gorilla around two 140lb boxes

I totally agree and I sold my fridge around 1989 because it was (IMHO) too big and heavy, and I didn't like the sound. The people who love fridges typically don't want to hear a lot of high frequency content so the dispersion pattern is not a factor to them.
 
Another option....Instead of disconnecting a pair of drivers in each cab, run dual mono on one cab (all 8 drivers) and run just half of the second cab. This will provide a 2.67 ohm load and evenly distribute the power to all 12 drivers.

I was curious on if I did this would I still engage the 2ohm mode on the back or would I put it in 4 ohm mode? I’m assuming I’d still engage 2 ohm mode even if I run the cabs like you said. I really like this idea and will be trying it this weekend. Thank you!

I believe the correct procedure is to engage the 2 ohm mode any time the load drops below 4 ohms. Probably best to contact Darkglass.
