I used to have LED's in my finger ramp. If you make custom pickup covers, you can easily throw some LED's in there too. Otherwise, many small-time builders can probably help you out with ease.

I wonder how they do that. Surely the LED's on the outside interfere/ occupy the same space as the coil?

Imagine that under that cover there are pole pieces sticking up under each string. The LEDs are placed between the pole pieces in the "gaps" between the top of the pickup and the cover.
The LEDs used are likely of the surface mount variety. Here is an example:

They really would have no problem sitting a few of these on top of the pickup, as they take up about as much space and height as a pole piece.
