now i'm planning for a new build
And would like to keep my maple neck as naturel as possible, just like a fender neck

Still, specially if you don't know it is imported wood, it may be European maple which is very different than American hard maple. I think both of these species do generate that birdseye variety. They are pretty different in color, hard maple being lighter.

What is the finish Fender is using? Some lacquers do darken wood more than others. Water based varieties don't change the color nearly as much as thinner based ones and oil based, tung oil based, darken wood as much as oil finish. One trick would be first bleach the wood which makes it virtually white but again color of the finish will be even more pronounced.
