I just bought my son an Orange OB1-500 head and a Mark Bass New York 122 cabinet. Up until now he has only had an older Crate Combo Amp. So we have no experience with separate head and cab setups.

I am thoroughly confused with the speaker wire connections as there are two inputs on the back of the cab. Do I need to use two wires or just one? There is zero documentation on the mark bass website for connection.

The cab is specified as 8 ohm and the OB1 has multiple connection options, not sure if it is the 1x8 or the 2x8 option.
1 x 8 Ohm cabinet: Use either speaker output
2 x 8 Ohm cabinets: Use both speaker outputs
1 x 4 Ohm cabinet: Use either speaker output

Thanks for any help.

One wire to one cab.
Don't overthink it.

The speaker cable already has two wires inside the jacket.
The reason the speaker cabinet has two connections is if you wanted to daisy chain another speaker cabinet to it:
