There’s a pizza place here that I like that has a “Margherita” variety with no meat, just various cheeses, sauce, and a little garlic. It’s pretty good.

Yep, that's a real pizza in my book, but fresh basil is the key. Extra garlic and Italian sausage is my jam though.

I respect CT pizza. It's inferior but at least it's not the Chicago style casserole.

On the last part we can agree. I grew up in CT and there were only 4 places I considered real when I lived there. One was a Greek joint I could ride my bike to, go figure. The other three were the classic N.H. coal fired ones on Wooster St. There's plenty of awful pie in NYC, but the goods are sublime, no doubt. Nice that the water's good for something!

That's cool. I can't say that I've ever eaten pizza cooked in a coal-fired oven.

Those ovens stay hot (up to 900 degrees) for years non stop, maybe decades even. It's a whole experience way beyond the food part, especially in New Haven or New York.
