plain cheese pizza

A lot of Italian restaurants will only offer pizza as margherita or marinara. I have a question for New Yorkers: is Lombardi's supposed to be good? Because I was not very impressed when I went.

Gravy on pizza never before entered my pie paradigm. Where is "The Deep North"? Once you shifted my pizza paradigm with gravy, my first association was with southern-style cooking. A question does occur - is their gravy wavy?

I'm curious about that, also. I have had bar- b-que pizza, if you can call the stuff they serve at Cici's Pizza pizza. The "gravy" gave me a mental image of pizza covered with rice and gravy and smothered pork chops.
I believe I saw a television cooking show that referred to the pizza sauce, spaghetti sauce as gravy. YMMV

When I worked in sound system field service I was based out of East Hamden, and we had 60+ systems scattered around Yale. There were amazing sandwich/sub/grinder places all over the greater New Haven area. And yeah, the lines on Wooster St. were nuts. My brother in-law who taught at Yale would always order to-go from The Spot, which used to be called Pepe's Annex at one time IIRC.
Yuck! That's not pizza. That's some other kind of monstrosity on pizza dough.

To each his own. I like it many different ways in all reality. The plain cheese pizza is one of those variations.
When I was a kid plain cheese was the ONLY kind I could eat. Now, I like pretty much any simple traditional topping. But I'm still happy with cheese too.

As far as my standard for judging a pizza, plain cheese always works, but I will sometimes try the ham and beef. It's a two meat topping pizza that doesn't have too much spice to cover up the flavor of the pizza.

Clam pie is a very traditional thing in New Haven. Out here there are a lot of variants on smoked salmon with white-ish sauces too. I'm far from being a purist, except that the ingredients have to be legitimately top shelf to keep me interested.

You're welcome! I don't know for sure if it's poultry gravy or beef gravy, but it's pure Alc-O-Sorb™! A key part of a 10,000 calorie day!
The place in the article below is located a half block from where I lived in my early 20s. Strategically located in the middle of a the second most popular pub district in the city. A very popular spot at 2 AM!
