I'm sure part of my fondness for it is hearing it repeatedly as a child, but even today I appreciate the musicianship on Joe Dolce's Christmas album. (Roger McLachlan on bass -- not complex, but very tasteful bass lines throughout!)

The Vince Guaraldi version of "What Child is This" from the soundtrack to "A Charlie Brown Christmas".
I sang in a church choir for several years as a boy and was in chorus and madrigals through high school and college, so I'm very partial to multi part vocal songs. I particularly like "Carol of the Bells" and "The Wassail Song".
Hearing Handel's "Messiah" sung with a full choir is an amazing experience.
I absolutely detest "Frosty the Snowman" and "Santa Claus is Coming to Town".
