How can that make a difference to string height though?
the same saddles are on steinbergers and I can't see how it would help
Well, which model of Steinberger? I used to own an original L2 and these are not the same saddles.

Overall it's a give and take between the front and rear allen screws as to how your saddle ends up. It's not an "action" thing (the tilt back). It's about providing a smoother break over the edge of the saddle. I imagine the new Spector bridges with the intonation screws will limit this tilt back as the saddle will pretty much have to stay in line/level with the angle of the intonation screw.

The high mass of the Spector bridge is great, but personally I think they'd all be better off with the type of bridge model they're using on the wide 5's (I think some regular USA bolt ons may have them also). It's just looks like a more functional bridge. The current Spector bridge is very (functionally) dated at this point, even with the addition of the intonation screws.
 
The design is very close PhatBasstard. They're the same essentially. Diagonally opposed screws et al - I didnt mean they're a straight swap for each other.

The point remains the same - messing around with the height front-to-back of the saddles will not change the string height to a greater or lesser degree than adjusting the bridge so that the saddles remain level, if you follow.
