If you don't like the pay, don't take the gig. Giving away hospitality to people who would otherwise buy a drink remains crappy. Again, I don't know where you find this "rip off the musicians as the biz model" 'tude as the norm. I've been playing bar/club gigs as my living for decades, my sample size is not small.

You're more than welcome to be comfortable playing into the hands of those who are willfully ripping you off. Lots of people are. I'm not, because I've watched the evolution of these attitudes over time. It's like watching lambs skipping happily off to slaughter, though not quite so dramatic or such high stakes.

It's okay for you and I to perceive these things differently. I don't expect everyone to see things from the same vantage points.

I have never had such adversarial relationships with clubs as the norm, and I've been doing this all over the country for over 25 years. Where exactly are all these venues hell bent on ripping you off?
 
I'd tell the bar to keep the water coming, with a twist.
If you were the "designated" driver you drank coffee for free.

Even if we drank a couple freebies, or a few, we tipped AND we called out the wait staffs fine work and everybody give the hand and tips are greatly appreciated. It helped. Follow on gigs were always smooth and easygoing.
