Well, from one of the threads in Effects, it looks like some people on this forum like pasta. I like pasta. Post your favourite pasta dish recipes here!

Here is mine - it is called Penne Paesana. I borrowed it from the Italian restaurant that I work at during uni holidays.

Fried, seasoned chicken breast
Mushrooms cooked in butter, garlic and S+P
Toasted pine nuts
Green pesto
Penne


Winner.
 
Mmmmm, pasta.

More often than cracking open a bottle red sauce I do kind of a quick and easy Pasta Primavera.

It always starts off the same. Olive Oil and lots of minced garlic. Salt, pepper, parsley, and basil with diced tomatoes.

Last time I just put in some red, roasted peppers and it was fantastic. Most of the time I simply add a bag of frozen mixed veggies. I try to stay away from cheese, but it's great with some shredded parmesan.

Easy and delicious.

Do you guys stay traditional or add anything different?
 
My wife (who happens to be a chef) made some wicked-good fettuccini alfredo florentine with a pan seared pork tenderloin last night. I grated the parmesan... I'm such a big help.

No recipe, I'm just bragging about my totally awesome wife and fondly remembering last nights meal.

I'm hungry.
 
As for the lasagna, try a layer with whatever "red" sauce you dig, then one with alfredo, and alternate. Also throw some veggies (broccoli, cauliflower, shredded carrots, whatever you think will fit) with the cheese layer (GOOD mozzarella is my pick). Awesome ...

Lasagna just can`t be beat, now why couldn`t you start this thread BEFORE the weekend ?!? so much hungriness, so little time :)
 
I love a good pasta, especially tagliatelle or pappardelle containing eggs. A favorite is this simple recipe:

Boil some tagliatelle or penne until al dente, not longer. In the meantime, fry some chicken cut in pieces in butter or oil in a large frying pan together with some chopped onions and perhaps some garlic. Pour over a fair amount of heavy cream, add some blue cheese to taste, and let boil a little while stirring, but not too long so all liquid evaporates. Salt and pepper (cayenne pepper is good here) if needed, but remember the blue cheese is rather salty as such. Add the drained pasta and stir in the sauce. Serve and garnish with coarsely ground parmesan and some basil leaves. Enjoy with a medium bodied red wine.

You cannot swap out the heavy cream here. A "light cream" will ruin the meal completely. You can add bacon if you want though.

I have a lot of other recipes as well that I've tried out over the years, mostly by experimenting. A "bolognese" with minced meat, salami, heavy cream and creme fraiche is another favorite. Another one with minced meat, chopped tomatoes, red wine, balsamico and cream is also nice. As you see, I have a special love for heavy cream. Can't help it tastes so good. :)
 
Good olive oil
one clove fresh garlic chopped.
chopped sun dried tomatos
lightly cooked pine nuts
chopped fresh basil
ground pepper
fresh parmesan cheese
Either my own home made pasta or bow tie noodles.

I'll put olive oil in a frying pan set to medium low heat. Put pine nuts, garlic and drief tomatoes to release and blend the flavours. Rince the noodles, thrown in the stuff from the frying pan. Usually add more olive oil. Thrown in the fresh basil. Option: throw in chopped black olives.
salt to taste.

Great served cold.
 
Fusilli pasta
A lot of pesto
Marinated sundried tomatoes - cut in smaller pieces
Black olives - sliced
Salami or ham - cut in pieces
Olive oil (good one)
Chopped fresh basil
Other vegetables if you like (e.g. peppers, cucumber, cherry tomatoes)

Mix all ingredients in a bowl and you have a nice simple pasta salad. :)
 
The BEST pasta is when you make it fresh at home. It's not all that difficult. Once you've had fresh, it's tough to go back to "normal" pasta.

The WORST pasta is whatever protein-enriched ultra-healthy pasta the wife just bought. I have some in my lunch today. I might be going to the cafeteria instead. :ninja:
 
I love fresh made pasta. There was a semi-local restaurant that had wonderful homemade bow-tie pasta. It was one of my favorite restaurants but unfortunately it closed recently due to the owner of the building jacking up the rent on the restaurant.

I need a good recipe for homemade pasta. :)
 
One of my favorite things to do with pasta is the simplest thing you'll ever see. Aglio e Olio. Basically, boil and strain pasta, lightly saute a whole bunch of chopped garlic in olive oil, dump the oil and garlic over the pasta, throw a good quantity of grated Parmesan in, give her a stir, and start biting!
 
I have a pasta machine at home. Agreed it's not that difficult to make own pasta (even without a pasta machine), but the whole process is rather time consuming. It tastes a lot more though and worth to do when you want something a bit extra.
 
I too have a pasta maker. I use it 3-4 times a year. Nothing beats fresh.

You need the right flour.

Deacon, do you use flour, eggs and water or just eggs and flour?

I use mine 1-2 times a year. I've used it maybe five or six times in total... :) Usually I put no water in the dough, but I like to add a little bit of salt. Only if I accidentally put too much flour in the dough, I add some water for compensation.

Isn't it pop to be into cooking? I mean, when you look at the cooking TV shows, many of them feature young male chefs like Jamie Oliver. The rest of them feature young attractive ladies instead. :)

Btw, I haven't yet dated a girl who wasn't impressed by my cooking skills. Nothing wrong with knowing how to prepare a nice dinner. ;)
