i did some work at the Cadbury factory in the midlands with Johnson Controls some years ago....they measured the amount of caramel in a recipe by way of a laser and it's reflection phase shift determining overall viscosity... very repeatable.....pretty nifty...
I don't think anyone's drinking anything with alcohol to be healthy.

Never tried Bournville but as far as milk chocolate goes, Cadbury makes some of the best.

Bournville is named after the area that the manufacturing plant is in, I think.
