Crisp up 4 Chopped corn tortillas in high temp oil. Crispier the better.
Blend 6 eggs, 1/2 jalapeno, 1 Serrano chile, depending on taste and heat.
Pour onto crispy tortilla chips. Add desired salt.
Cook until done. Be sure to use a metal spatula so the eggs can be flipped and evenly cooked.
For me, no need to add salsa. It's good with avocados.
Enjoy.

I left out to use a wide pan so the eggs spread out and cook more evenly and quickly. You have my Bride’s undivided!
She Must know the name of this dish!
She’s ready to go home and get to work on it immediately!

Your last picture looks like a side vent on a hot rod hood. Now that I know what it is, I went back and took another look. Yeah, now I see it. Cool!@Stumbo I must be feeling especially dumb this morning...my last is a shot of some plates...which seems appropriate as this thread is developing nicely as a cookery instruction lesson!
I'll be showing your egg posts to my daughter. Personally I don't care for eggs but she loves them.
Hot rods, sadly, were never a thing here in Ireland.Your last picture looks like a side vent on a hot rod hood. Now that I know what it is, I went back and took another look. Yeah, now I see it. Cool!

A shame. I could totally see myself in one of these...
