i used to add lemon juice to pancakes, it does nice things to the texture.
i thought i knew all about pancakes till my gf made hers for me. they are a meal by themselves. she puts all sorts of stuff in there. grains, nuts, berries, even oatmeal i think. it is not light and fluffy, but it sticks with you all morning.
