If I remember correctly there were 5 Bass players that recorded on that album,Dee Murray,Brian Odgers,David Glover,Herbie Flowers and one more Bassist who's name escapes me.

It was either Murray or Flowers. Which one of them had the red Jazz Bass with block inlays?

Older brits like myself will remember both these guys fondly, particularly Herbie who played on everything from 'Walk on the Wild Side' to 'Two Little Boys'

I heard somewhere he spent 10 years in the army as tuba player and didn't pick up a bass guitar until he was about 30 ??

That blue jazz bass played of tons of hit singles in the 70s, as well as his more famous work with Bowie, Bolan, Reed etc. Think he's still playing, although Dee Murray sadly died a long time ago.

I'm very curious about the production process that ends up having 5 different bass players on a single album of this calibre. Does the producer and/or artist actually sit down and decide 'player x would be ideal for this track' ('let's see if he/she is available')? Or is this more of 'friends knowing friends' thing?

A combination of all that you mentioned.

Nor at all. Dee sang on stuff on "Madman Across The Waters", but only played bass on one song, "All The Nasties". I don't think he played on any songs on "Tumbleweed Connection", and know he didn't appear at all on "Elton John". "Honky Château" is the first studio album that has the band ( Dee, Nigel, and Davey) on it.
