Why so many EQ options?

As with all this stuff, that just depends.
Yup. It's called "real world." Fancy way of saying there's always gonna be at least one exception.
Nah, IMO, so many options exist because so many problems need to be solved.
You may want to tone shape on your bass, but if you want to refine tone shaping you may use the graphic eq, and if that doesn't quite get you the sound you want, then a parametric eq will get a more narrow q to surgically shape the tone.
If none of these work well enough for you, there are all kinds of different eq pedals.
Companies are smart to cash in on people who aren't satisfied with their sound, so they create options, which all come with an ever increasing price tag.
Back in the old days a bass amp didn't have much in the way of tone.
It's like buying a car, some come with back up cameras and onstar... Many people don't feel they need all that and opt for something more plain... whatever floats your boat, you can be sure that someone has a boat floater!

I play jazz. on a fretless Fender Jazz. i have a compressor, a tube preamp, and an amp. I really don't adjust anything at all except for the tone knob on my bass. more tone for cutting through bigger combos, less for more old school trio type stuff. I keep it pretty simple.
yeah... this right here is the problem. That isn't real world for many of us that (well used to be out playing live).
Reason I use my floor EQ is so I never have to turn to my amp on stage. Mine is in the chain to act as hpf/lpf and to adjust for body when using primarily synth effects. Those adjustments, while subtle need to go to FOH from my DI as my amp on stage is essentially a monitor

Most amp heads don't have what's needed to cut and carve perfection. So the EQ, just a tool to help with that.
Most newbie's start boosting the filters and get frustrated with the sound. YA gotta cut out the bad stuff first and
then add the salt and pepper. The biggest problem with EQing, is you never STOP !! I have gone thru this and everyday it sounds different, or you are not in the mood. Can drive you nuts with time. The 7 band boss pedal
has enough filters for bass. A 31 band @ 1/3 octave WILL make you crazy !! With good hands and a decent Amp, you can do well with the the controls in the head for most music. Then there is Acid Rock ??
