Were the neck screws tight with the shim in? Also try with the shim in and the strings tuned up, loosen the neck screws about 1/8 turn, to allow the neck to be pulled into the neck pocket (towards the bridge), then tighten the screws back up and see if the tone is better.

The string height can be adjusted.....it's a bit of work but it can be done. I think you will find the height difference very slight. It's still a good way of testing other strings to see if you like them. Only then you can set about lowering the strings...if even necessary.
