    Get an SPL meter, and solo each sub individually. You don't know the taper on the amp attenuators, so figuring it w/ math is probably useless. Or you could just do it by ear, by estimation. Simpler, and how important is matching the outputs anyway?

    I don't see any reason the SM7B won't work, but the norm for vocals in live sound is an SM58, which is a darn good vocal mic. Also, the SM7B is aimed more toward spoken word and such. But really, it ought to be fine.

    I am guessing you are using a 266XS or 166XS. When running the comp stereo, you can enable "Stereo Couple" (the button in the middle). This makes channel 1 the "master" and channel 2 will copy the parameters from channel 1. Channel 2's controls will be disabled.
