I really like my Ampeg SCR-DI, both for home practice (aux in and headphones, or through an amp) and at church through the PA. Easy to use, great range of sounds, and built like a tank.

I prefer my photography with a single fixed lens as well. In that endeavor I’ve found that simplicity and constraints make for better visual art. Maybe it’s the same deal with music?
Definitely second the Ampeg SCR-DI. It's great for quiet practice (with our without your iPod). It can add nice tonal to your existing amp. And if/when you start playing with a band, it's a DI.
