Are old unused strings good for use?

Check them for barnacles and clingons first.
If they've got weird stuff on the windings, they're not worth putting on.

You could use them as small files if they've gone dead through oxidation or dirt accumulation, etc.

If they are used strings, just recycle them. If they are new and still in the original packaging, then just wipe them down really well with either denatured alcohol, or 91% Isopropyl. Then you are good to go.
