Here's a great recipe for avocado pasta I found on the web:
1 garlic clove
½ chili pepper (remove seeds)
1 lime
2 ripe avocados
salt
ground black pepper
dash of good virgin olive oil
fistful of fresh basil (alt. leafy parsley or cilantro)
30 g (1 dl) grated pecorino cheese
30 g (1 dl) grated parmesan cheese
400-500 g spaghetti
Prepare the sauce right in the serving bowl:
Finely chop the garlic and chili and put them in the bowl. Squeeze the juice from the lime over them.
Split the avocados and take out the stones, then dice them in their skins. Use a spoon to scoop out the flesh into the bowl.
Chop the herbs, grate the cheese and add them into the bowl along with salt, pepper and a splash of olive oil. Stir with a spoon and taste.
The sauce should be pretty salty, or the end result will be too bland.
Cook the spaghetti al dente: about 80 % of the recommended time is enough. The water should be salt enough to taste like sea water.
Drain the spaghetti in a colander, but save a cupful of the water and pour it in with the sauce in he serving bowl. Add the drained spaghetti
and mix with the sauce. Grate some fresh parmesan and black pepper on top.
Serve immediately.
