I took another step toward perfecting my breakfast tacos.
I finally found some good corn tortillas that don't break and rip, and still taste like real corn. I made a batch this morning, then had a few more for lunch.
Once I perfect the chorizo to cotija ratio, I think I'll have nailed it. Then on to potato.

Breakfast for dinner last night. I had some scallops that I wanted to use before they went bad so I had them as a side. We all know that bacon + scallops = win ... I wonder what if a bacon & scallop omelette would be good? And just as important, ChefCleff, which cheese would be the best fromage for that science experiment?
