I'm thinking about getting a GK 1001RB, however would a NEO 212 be compatible? I don't want to get a 410 because I'm not sure it will fit in the back of car.

The Neo 212 comes across more Even or neutral sounding than the Neo 410, which delivers strong bass. Bass not lacking in the 212; the 410 low end is just more prominent and lower.
Would a 700RB also do well with a NEO 212?
And regarding the 410, do you find it difficult to fit in the back seat of a mid sized sedan?
Yes. I also have a 700RB. The difference between the 700 and the 1001 is the 700 will provide the GK grind at lower volume and the 1001 will stay cleaner longer. The 1001 is maybe a couple dB louder being 700 watts v. 480 watts.Would a 700RB also do well with a NEO 212?

I have a GK 1001RBII and a Traynor 410NEO, which fits in the back seat of a 2014 Honda Civic. Just have to move the front seat forward to get it in.Would a 700RB also do well with a NEO 212?

You can get HD212.Yeah. Get two HD112's.
