I've heard two versions of War Pigs that were better than the Sabbath original:
Faith No More's version was awesome, then when I saw Zakk Wylde's band Pride & Glory (before black label society) he did war pigs way better than any version I've ever heard (Zakk sang it). Although I don't think that he ever recorded it, so I dunno if that counts...

Their version of the Commadores - Easy is awesome as well (Faith No More that is)

I really like the cover Michael Andrews (f/Gary Jules) did of "Mad World" by Tears for Fears. I think slowing it down and simplifying the arrangement (just piano as opposed to loads of 80s synths) made an already good song totally awesome.
