Favorite Hot Sauce.... GO!

@68Tele-Bass - Ok, that's kind of inspiring. I have a bunch of dried Guajillos, house dried poblano, jalapeño, cayenne and thai. What sort of ratio do you use for poblano to jalapeño to Cayenne or Thai ? maybe better expressed as mild to medium to hot...
Sorry for the late reply! I go for more mild chili powders now than I did back in the day…I use New Mexican reds, guajillos and dried poblano for earthiness as well. Kick the heat with a couple Arbol, cayenne or jalapeños for a bit of heat if you want. I figure you can add heat at the table if you wish- Blair’s Ultra Death (2-3 drops…) or simple Tabasco work for me!
I’ve cut down my hot sauce intake. My digestive tract appreciates it. I look at my El Yucateco as an occasional indulgence and appreciate it so much more now.

I Love the El Yucateco!!!! Red and green…it was the first habanero sauce I was acquainted with about 30 years ago! Such great flavor, and just a nice amount of heat!!

Texas Pete is a worthy offering, as is Tapatío-

I forgot how good the sauces are from Yellowbird. I've been going through this one at a record pace recently. So good....
It's spicy hot, but won't burn your mouth. It isn't sweet or overly vinegary. It has a nice smooth heat and flavor. You can actually taste the habanero before the heat and tingling kicks in. I'll have this by the spoonful just by itself.

They are SO LUCKY I saw your post on El Enojada late at night…. I ordered the Watt Sauce, the Raven (cherries and chipotle), and the Kurious Lemon (Meyer lemon and habanero).

I sent the three to the “buddy” who sent me the TWO “coffins” of Blair’s Ultra Death…(see above in the thread!…)

I then had to order the exact trio for myself. Can’t wait!! This looks like a great selection. I’m sure to try at LEAST another three.

“the Angry One” is intriguing. I think his first?? Says “I was just trying to make Tapatìo..” ;)

Ours arrived Friday of last week. I wasn't prepared for how watery the sauce is, but dang me this is legit good quality sauce.
As you can see, that Painted Desert is clearly our favorite. I'd almost drink it.
I wish the Curious Lemon was a little hotter, but it does have a nice smooth burn on your lips while still hitting you with that Meyer lemon flavor.
The Anaheim Angry tastes fresh and hits the spot for warm heat without a chemically flavor or too much vinegar.
I emailed Kevin to talk sauces after I ordered. What a rad dude.

Just thought I'd throw out a recent discovery. Nando's Peri-Peri Sauce. Centered around African bird's eye chilies along with aromatics like garlic, onion, herbs, etc. Kinda like a classic hot sauce with a tasty twist, along with a punchy kick. Recipes online to make your own, too.

Curious Lemon are most excellent on falafels with Tzatziki sauce.
That sounds like a good pairing. Along with the Tzatziki sauce, I'm figuring it'd be worth trying on a gyro, too.

I use that one quite a bit. Nice changeup and good flavor.

Just got mine.
Not bad. The fruit of the Habs overwhelms the more delicate Serrano flavors a bit though.
I'm a little over the habenero flavor though so that's my bias.
I grow many varieties of peppers. Most I cut in half, de-seed, and smoke them on the Kamado before processing into sauce, or smoked harder and grinding to powder. For heat and flavor I prefer the Thai and Korean varieties.
